The United States Department of Agriculture defines food insecurity as a household-level economic and social condition of limited or uncertain access to adequate food. It is measured annually as a supplement to the nationally and state-representative December Current Population Survey, capturing between 50,000-60,000 households in recent years. As highlighted at the links to the left, UKCPR has contributed extensively to our understanding of food insecurity affecting children, adults, and seniors in the United States through research, funded grant programs, and conferences.
